Mediterranean spiced marinated olives


  • 80pcs Spanish green olives
  • 45ml Extra virgin olive oil
  • 1tbsp Ground coriander seeds
  • 1tbsp Curry powder
  • 1tbsp Fresh ginger, peeled and chopped
  • 3tbsp Honey
  • 1pc Grated Lemon zest
  • 2tbsp Lemon juice
  • 1tbsp Chopped Flat Parsley Leaf
  • 1tbsp Chopped fresh coriander
  • Salt and pepper to taste


1. In a large bowl, mix Spanish black olives with the oil.
2. Add all the ingredients and mix well.
3. Wrap and refrigerate for 8 hours. Bring to room temperature before serving.
